Nolita: Astor Center Class on the Elements of Flavor

Want to understand what you’re tasting, and why?

Take Renee Marton, CCP and Margaret Happel Perry’s class at the Astor Center.

The Elements of Flavor

Each class will be prefaced by a detailed examination of the physiological process that governs your taste experiences (to be repeated briefly at the beginning of each subsequent session). There will be emphasis on training your palate to detect flavors, blindfold taste tests, and the application of these flavor elements as a basis to good cooking.

While the five-session course is recommended, each three hour class is a “stand-alone” experience and may be enjoyed separately.

The Elements of Flavor, Part I: Salt – A Positive Look
The Elements of Flavor, Part II: Sugar – A World Of Sweetness
The Elements of Flavor, Part III: Sour – A Subtle & Necessary Flavor
