“Umami” is a Japanese word meaning savory and despite current controversy, most certainly does exist. In this class you’ll train your palate to detect this taste-experience and learn how to use it to enhance the dishes you cook. You’ll also participate in an exciting session of taste-tests designed to challenge and educate the frontiers of your knowledge and palate. We promise such dishes as Caesar salad with Parmesan crackers, Australian toast, chicken scallopini with shiitake dust, and blue cheese tarts with port wine jelly, accompanied by saké, fortified wines such as plum wine and sherry, and red wine.
